Cooper Mountain Chardonnay 2021 Sambucese with subtle tannins and notesThis is a Chardonnay grown with real restraint, produced from biodynamically grown fruit grown on volcanic soil, fermented spontaneously with native yeasts and shaped by mostly neutral wood (just 15% new French oak against 85% neutral, with a stint in stainless and acacia too), so the oak stays a whisper rather than a statement. In the glass it shows crisp, apple skin fruit and a chalky, wet stone minerality. The palate is refreshing and light, more
